It’s the best fun!

But I have an issue this week…by the looks of the food I’ve photographed, I’m about to Starve!!! That means of course that I didn’t do my usual excessive photo shoot this past week.  I have a few things but I was NOT about to miss the party!

There were green bananas which took the longest time to turn yellow, but when they did, they were So sweet and good!

File this under “not attractive, but tasty.”  My friend Gail had the idea to put refried beans and salsa on a plain rice cake.  It is so tasty, doesn’t count for much on Weight Watchers and is very filling!

My always favorite  pepper and egg sandwich with American cheese.  It is the best!

Overnight oats with home frozen blueberries…before warming…

After a minute and a half in the microwave.  I just like it better warmed up a bit.   Half cup oats, third cup fat-free vanilla yogurt, half cup almond milk, 1 tsp chia seeds.  Very tasty.

As I said, I have very little to show for myself this week.  Just came back from a trip to the produce market so there are lots of veggies in my future.  I need to get back on track with Weight Watchers anyway and for me salads are the best way to do that.

  1. ok, it is true that your photos this week are not QUITE as exciting as when you share about a birthday party celebration, fran! but that is ok!!
    rice cakes make the BEST base on which to add such a variety of toppers – i love the crunch they provide, they are sturdy and don’t add flavour so you can totally use what you put on (savoury or sweet!) and make up great tasting combinations.
    glad you got to the market and are fully stocked with veggies – big purple bowl salads coming right up, eh?!

  2. You are doing well! I’ve never tried overnight oats but they look delicious!

    • Hi Diane! They really are good. I think most people eat them cold, but I like them better warmed in the microwave. They’d be a good take along breakfast for a road trip because they’re ok cold. May do that this summer when we do our road trip.

  3. Although I often put eggs in a tortilla, for some reason I’ve never thought of putting them in a sandwich. Looks good!

    • Dana, my mom used to make us pepper and egg sandwiches. We always had them when we went to the beach on white bread wrapped in aluminum foil. They were always totally soggy and totally delicious! This sandwich reminds me of them only with better bread!! 😉

    • Thanks, Diana! I thought it was a catchy title! The frozen blueberries are SO easy! I just wash them, put them on a small tray in the freezer and when they’re frozen, put them in a zip lock bag! Simple. Still have some from last year. I need to think about doing some more!   10. I love refried beans and salsa on rice cakes! I like to add some avocado sometimes too. Just have to eat it fast before the cake gets soggy and loses its crunch…..no problem for me. Still have good eats…..happy WIAW!

    The sandwich and beans on rice cake look so good but green bananas are so annoying when they take forever to ripen… when I was living at home, my dad liked to eat them green and my mum liked them really overripe and brown so we never had any perfect ones!

    • But, Elle, you probably never had to toss any because your mum would eat them even to the end! Ralph and I are always saying how we have to eat them as soon as we realize they’re right…we’re both middle banana people! Yes…LOTS of veggies and I’m loving it!
