WIAW~Back to NJ Life

I’m back from Maine and finished talking about what I ate there.  Well, in truth there were so many good things that I still keep talking about them, just not here!  It is of course time for What I Ate Wednesday hostessed by the lovely Jenn at Peas & Crayons.  I’m actually wondering what’s up with her…there should be a baby on the way and I’m just wondering….

I’m forging ahead as though there will be a WIAW, because after all…there’s Always a WIAW!

I’m still a bit confused since coming home from Maine.  I have food photos but almost No clue what day they’re from so I’m just going to share.  I was attempting to get back on track with cooking and eating but of course, life gets in the way and that doesn’t always happen.



Nothing gets me back on track better than a salad in my Big Purple Bowl…this one with veggie burgers and balsamic vinegar.  Homemade iced tea on the side.



A trip to the diner?  That sounds like home.  My favorite choice there is an egg white omelette with spinach and mushroom with sliced tomatoes on the side.  This is the time of year to ask for the tomatoes.  So good!



Pinto beans in the crock pot…one of my faves!  So many things to do with them.



However they always seem to end up in a salad in the BPB!!  Happy me when I eat this!



A veggie burger at the diner with provolone cheese.  So good, since I hadn’t had one in a while.

Yummy lunch at my sister Ele’s on Labor Day.  My salad plus her lentil rice salad.  Plus a dressing I hadn’t tried before…sun dried tomato.  So Good!

Pumpkin ice cream


Couldn’t end the holiday or the summer without some ice cream.  This is my new favorite and it’s sad that I know the shop will be closing soon.  Several reasons to be sad but this is Pumpkin Ice Cream!!! This is So good.  This is the second time I’ve had it and I need to go again before they close…for one…last…cup…

WIAW~Still Boxed In

I can’t believe that it’s already time for another What I Ate Wednesday!  This week has flown by and as you can see from my recent posts I’m in a bit of a whirlwind here.  The days have passed but I’ve been very productive so I’m happy with that.  I remain boxed in…meaning I’m still working among the boxes and general stuff around here.  The good news is, there are many fewer boxes than there were.  I would have accomplished more if I hadn’t had to clean up water from my leaking air conditioner, but more on that another time.

We’re here to talk about Food!  Thanks to Jenn at Peas & Crayons for as always being our gracious hostess for the Foodie Madness that is WIAW!  Be sure to visit there when you’re finished here.  There’s always something good to eat over there!

Peas and Crayons

Starting with breakfast…in fact this edition of WIAW is pretty breakfast-centric.  At least I’ve been eating breakfast, which I was ignoring for a while.


My recent and current favorite…bran flakes, Fiber One and soy milk.  This is delicious and keeps me satisfied for a long time.  Good thing in a breakfast!


A big salad in my Big Purple Bowl.  Black beans and couscous added to bulk it up.  I need to get back to making grains to add to my salads.  I always enjoy them that way.


Ok…so I didn’t really need to eat this.  French toast and scrambled eggs.  This was delicious and really too much for me to eat.  I did enjoy it and made the concession of having sugar-free syrup with it.  I don’t do this very often.

Another breakfast…


A little more appropriate.  I love ordering oatmeal out.  It just tastes better.  This was actually eaten because my stomach was kind of upset.  You see, I succumbed to pizza on Saturday night and suffered for it on Sunday morning.  Maybe the french toast was part of it too.  I should know better…I’ve been eating so healthy lately that things like pizza just don’t sit well.  I’ve learned my lesson!

Last but not least, back to a Big Purple Bowl salad again.


This time with home cooked pinto beans cooked in the crock pot.  Just love making beans this way.  So yummy.  I’ve even figured out how to reduce the amount of what I cook so I don’t run the risk of them going bad.  I hate to waste food…especially beans!  Also making an appearance here is a treasure found in the cupboard.  Clearing out is a good thing.  I found this great cup with a straw that I used to use when I was working.  Works great for my iced tea.  Less chance I’ll  knock it over and spill it…I’m a bit clumsy!

This post seems rather short this week, but in truth, I’ve got work to do.  As much as I love WIAW, I’ve got to get back to my projects.  I’m feeling so good about all that I’m accomplishing.  I’m going away in two weeks so I need to get as much done as possible.  Then when I’m away, it’s Ralph’s turn to work on projects!

WIAW~Surviving The Week

So many times the food that I eat and post would be forgotten if I didn’t take photos of it.  But what would be the fun of doing a What I Ate Wednesday post if I didn’t have photos?  Well I have done it without photos once when computer demons were wreaking havoc on me, but this week we’re good.

It was a tough week emotionally for me for various reasons, and I will confess that not Everything made it into a photo.  I’m also not proud of everything I ate, but as I like to say, it’s gone and it can’t hurt me anymore.  I am proud that I said “no” to an apple fritter at WaWa at Least 3 times.  Never did have one and that’s Ok by me.

What I Ate Wednesday: Love Your Veggies

This isn’t actually Love Your Veggies Month, but I like this logo and I sure have my share of veggies in this post!

After Ralph’s regular doctor’s visit we went to one of our favorite lunch spots.  I got my usual there, the Athenia Burger.


It’s the Greek salad with a substituted  veggie burger on the side.  This is so good.  They cook the veggie burger just right and the Greek salad is just enough.  Yum.

This is actually a different salad, this time with canned black beans.  They taste better home-made, but keeping some canned beans in the pantry is such a good idea.  Another thing I’ve been adding lately is a chopped up Gala apple.  So tasty.  I’m getting back on track though and there are some pintos cooking in the crock pot as I type this.  The BPB just loves to be part of  WIAW!

We haven’t gone to Subway in a while and Ralph suggested it one day last week and I said Yes!


Honey wheat bread, pepper jack cheese, spinach, tomatoes, onions, green peppers and black olives with chipotle southwest sauce.  Really tasty.

My reward on Saturday for all of my hard work on the yard sale…


My new favorite combo-black raspberry and peach.  This doesn’t look it, but I was controlling myself and got a small instead of a medium.  So good.

I guess that’s a good place to stop!  As I say, it was not the best food week, but I have no photographic proof so you can believe me or not.  I just like to be honest.  I’m feeling more in control now and  we’ll move on from there.  I’m sure everyone has a week like that now and then, I just haven’t had them lately and it’s a little scary when it happens.  I’m feeling a little closer to the top of my game.  I think the weather has something to do with it.  This rain is putting me in a terrible funk.  How do people live in a place like Seattle where it rains all the time?  Just makes me more determined to get to New Mexico SOON!!

WIAW~This Is Only A Test

This is only a test.  No, we’re not going to talk about the good old days when we had air raid drills and hid under our desks at school.  That would go too far toward talking about how old I am.  This is What I Ate Wednesday, hostessed by the lovely Jenn at Peas & Crayons and best fun you’ll find for your money out here in Blog Land.

Here is where the test part comes in. In Monday’s post, I revealed that I’m using my new camera.  I love the results I’m starting to have when I take food photos.  Only thing is, I don’t always have it with me and some of my photos are on my point and shoot, some on my DSLR. I don’t quite feel cool enough to drag it out in a restaurant, Yet!  SO  the test part comes in because I’m not sure if I can figure out how to hook up both to download the photos.  They may be a bit orderless because of this.  But, Hey…I’ve done WIAW without any photos at all, so this has to be better…somehow.

Still don’t have much in the way of snacking, but again…hasn’t stopped me before!

I think this may work, If I don’t electrocute myself!



Cottage cheese, ground black pepper and sweet pickle relish combined on top of plain rice cakes.  One of my favorites.  Quick, easy and only 3 Points.



One of my traditionals…mixed cheese salad with balsamic vinegar from the local pizzeria.  So good, which is why I have it so often.



Breakfast out with my friends from Weight Watchers.  Egg white omelette with tomatoes, green peppers, onions and feta cheese. Sliced tomatoes on the side.  So good and a fun visit!



Side salad at lunch…It started out as Ralph’s but he didn’t want it so I took possession!



Veggie cheese steak…I have no words for how good this is!!



You know I couldn’t do a WIAW without some ice cream.  This was the very odd but incredibly delicious combo of black raspberry and key lime pie.  So Good!



Trying to be better about eating a Real breakfast.  This is egg substitute and egg whites combined with chili garlic sauce, cooked in the micro for 3 rounds of 1 minute.  Comes out perfectly.  A Gala apple for some crunch.  Very filling!



A big salad in my Big Purple Bowl makes me so happy.  Consisted of romaine, celery, green and red bell pepper, tomato, crock pot pinto beans, romano cheese and balsamic vinegar.  This was so good.  Should have added an apple, Probably will do that tonight!   😉



Yummy breakfast!  Gala apple with cinnamon, warmed in the micro for 2 minutes.  Topped with fat-free vanilla yogurt and that wonderful granola that I’m still working on!  This was really good and filling!

So as you see, I haven’t done a heck of a lot with snacking and I think it’s for the best.  Staying on track is good and snacking, even good choices sometimes lead me down the wrong path.

WIAW~This Is More Like It!

I know, I know…Last week I was lamenting how few food photos I had when I posted for What I Ate Wednesday.  This week, I’m trying to decide Which photos to use…seems like I have an over abundance.  Regardless, I will NOT miss a chance to be part of the Fabulous Food party created by Jenn at Peas & Crayons.  Be sure to check it out and leave some comments.  Just be careful of drooling all over your computer!

Let the Food Fun Begin!!



One of my old faithfuls and one of my favorites!  Caramel corn rice cakes with a quarter cup of low-fat cottage cheese split between them and liberally topped with cinnamon.  This is a great quick lunch for me when I’m working on my many projects around the house.



For our short road trip on Tuesday, Ralph and I stopped at a pizza shop that we love but only get to visit once in a while.  This is a hot veggie wrap. You have your choice of wraps, I chose the tomato (because I knew the color would be pretty!) It has broccoli, mushrooms, onions pepper and provolone cheese.  It is So good.  It comes with a pickle and chips.  I got the pickle, Ralph got the chips.  Yum!



Made a crock pot full of black beans…well, because I Love black beans and I’ll eat them all!



Nothing like a salad in my Big Purple Bowl that is filled with home cooked black beans.  So good.  Keeps me full for hours!  More Black Bean fun later in the week.


Look familiar?!  Yes, it’s my fave…spinach and mushroom omelette with sliced tomatoes.  Funny thing, here.  I’ve been getting egg white omelettes lately and forgot to ask for it this time.  It tasted so different with the full eggs.  I’m thinking I like the egg whites better!



An unexpected visit to one of our favorite diners for one of my favorite meals…the Athenia burger.  Greek salad along side of a yummy veggie burger.  Just love it!



Back at our usual diner, something I’d never tried before.  My friend, Gail had suggested it.  They call it a “veggie cheese steak.” It’s grilled veggies-mushrooms, onions, tomatoes, romaine lettuce and some other things I’m sure-all cooked together on a roll.  It comes with American cheese underneath, but I asked for Provolone.  It was Delicious!!  Expect to see this, again!!

Ralph and I took Ele out to dinner for Mother’s Day.  Back at the diner again…ok…we Like the diner!!



Salad first, with ranch dressing eaten with the dip method…dip your fork in the dressing, then pick up the veggies.  You don’t use nearly as much dressing but you still get the flavor.  An old Weight Watchers trick.



And THIS is what passes as a mini-meal at this diner.  Huge! I was proud of myself that I only ate half, but I must confess I had it later.  So very good.

Now here comes the real true confession part of this post…



Our favorite place in the world…Ice Cream Kids…is open for the season.  Since it was Mother’s Day, we thought we’d splurge.  This is a new flavor, to me at least…not sure if they’ve had it before.  Caramel Apple…I’m drooling thinking about it.  It was just wonderful. I’m proud of myself that I asked for a small and it was just enough (although in truth if I’d been left alone with a spoon and the tub of the ice cream…it would not exist anymore!!) A great treat to end the day.

U is for Unusual and WIAW

U is for Unusual.

Those of you who read BCDC prior to the A to Z challenge will understand that many times I would be talking about food when I use the word unusual. Yes, I come up with unusual…ok…Strange foods.  Today’s collection is pretty odd.

But my life in general has always seemed unusual to me…bordering on Odd.  I’ve kind of hopped around job wise.  I did stay with being a travel agent for 24 years but during that time I worked at 4 different travel agencies.  I realized after a while that I never really liked the job and wasn’t really suited for it. I loved learning about the places where I was sending people, studying up on what there was to see and do in places filled with history.  But I could never really relate to the trips to the beach where all you did was turn red in the sun and drink.   A lot of people never wanted to hear about the history they just wanted the beach-y stuff.

None of this or any of my other jobs had anything to do with what I studied in college.  I was a speech and theatre major.  Actually the only job that ever really made use of that training was when I was a Weight Watchers leader.  Standing in front of the meetings, I felt I was doing what I was meant to do.

I suppose it’s unusual for someone to pursue jobs other than what they were trained for.  So many times jobs just fell into my lap.  That’s how I became a travel agent.  It’s too long a story for this post…perhaps I’ll tell it sometime.  It was unusual.

This topic doesn’t seem to be going anywhere for me, so I think it’s time to get to the Food!!

What I Ate Wednesday

There always seems to be an omelette!  I had breakfast on Saturday with two of my WW buddies and another new friend.



This was a different diner than usual, but the omelette was good just the same.  Egg whites with mushrooms, sliced tomatoes on the side and sprinkled with black pepper and Parmesan cheese.  It looks a little anemic, but that’s because we were sitting right next to the big windows and there was a Lot of light.  Still tasty!

We went out to lunch on Sunday with Ralph’s family to celebrate his birthday.  We started at our usual restaurant and we realized that none of us had remembered to make a reservation for the 15 of us. There would be over an hour wait!

Our niece, Marie, who is wonderful in all respects whips out her phone, while juggling her 1-year-old, calls a diner about a mile away and is told they could seat us immediately.  We gather up cakes, flowers and balloons and all head to our cars for the short trip.

We get there and they are ready for us.  It’s an unusual diner for us, not one we go to often, but trust me, we’ll definitely use them again after the great first impression and the great service we received.

I must say that my dinner fit into the theme of unusual, at least for me.

It started with a salad, nothing unusual there…



Good size for a side salad and I was very happy that I could get plain balsamic vinegar for my dressing.

Here comes the unusual part, odd combo…



Eggplant parmesan, baked sweet potato and pickled beets.  Each was delicious.  This was a Huge portion of eggplant so I didn’t finish it all, tasty though.  The sweet potato was cooked to perfection and with just pepper added it was delicious.  The pickled beets were obviously freshly made there. You can always tell by the spices when they are made right there at the diner. Pickled beets always remind me of my Grandmother.  She would have been pleased with them.

Last but not least…



Birthday cake!  This was delicious.  Ralph’s sister, Maddie always gets these and they are so good.  How did I end up with such a Huge piece?!

Of course, this would not be a WIAW at BCDC if it didn’t include a salad in my Big Purple Bowl!



Basic Salad with Morningstar Farms tomato basil pizza burgers all cut up and  romano cheese sprinkled around for good measure and of course my current favorite, plain old balsamic vinegar.  Very delicious and very filling!

Say Hello To Salads

One of my favorite things, right?!  Well, Yes!!  As much as I loved our trip to New Mexico, salads were not a big part of it.  Since our fridge wasn’t working properly while we were there, I couldn’t really stock up and have a bunch of veggies at hand.  I did make one big salad when we first got there, but after that, no fridge=no salad… 😦

I did get up and going on Thursday.  I got my hair cut early (photos to follow if they turn out decent) I got to Aldi for some groceries ( there was truly nothing in the fridge except mustard, ketchup, mayo and water bottles!) I then headed to the produce market and shopped with restraint.  Under the circumstances, I could have gone hog-wild, but I decided that I would keep my control.  It was difficult, because I was dazzled by all of the veggie goodness! 😉

When I got back, Ralph was ready for lunch.  I decided that since I would be facing weigh in at Weight Watchers today, I’d try to make a good choice.  Since Picasso’s is right around the corner from us, and I know they have things that are good choices, I suggested that.

I decided on their mixed cheese salad again.  I really can’t go wrong with this, it’s filling and very tasty with the balsamic vinaigrette added.  I love that they always give me extra.  Hello dinner salad!

I actually couldn’t wait to get to my dinner salad.  It had been So Long since I’d had one. 

I’m so out of practice, that I forgot to put the tomatoes in the photo!  But of course the romaine, celery, green bell pepper, shredded cheese and veggie burger made it!

Happiness is a Big Purple Bowl filled with veggies!!  I enjoyed this so much.  Ralph joked that if I said “mmmm” one more time he was leaving!!  It was very good and was just what I needed.  I think there will be many more of these in my future! 😉

I’m off to weigh in at WW in a little while.  I’m hoping I have an acceptable result.  I’m pretty sure I’ll have a gain, just hope I don’t have to pay!  We’ll see how it goes…Hope it’s worth not having my coffee this morning!

WIAW~In The Land Of Enchantment

Even if I’m confused about what day it is…and if you’ve been reading lately, you know that I am ever since we got to New Mexico…even with all of this…I Know it’s Wednesday and that means, What I Ate Wednesday!  That’s the wonderful food party instigated by Jenn at Peas & Crayons. Peas and Crayons

Since I’ve only settled into New Mexico and now our California road trip is looming, I’m not doing too well with summer staples, but when we get back to NM at the beginning of the week…we’ll do some stapling! 😉

Finally got the chance to try some of the Barbara’s cereals, they carry them at the local food co-op.  I wanted puffins, but settled for shredded oats.  These are So good.  Very filling which I like.

Made a great salad the other night.  Romaine, some local grown lettuce, tomatoes, celery, red and green bell peppers and an apple. I had bought some Mrs. Dash, figured that would be a good all-purpose seasoning to have, some parmesan cheese and light ranch dressing.  It was very good.  Like my Big Green Bowl? Got it for $1 at Target.  Works great although, I do miss my Big Purple Bowls… 😦

Ralph and I went to the local Asian Buffet.  We’ve been there before and one of my favorite things is the fact that they have vegetarian hot and sour soup.  This is very spicy and yummy! 

I also had a nice plate full…

Veggie lo mein, veggie mei fun, egg foo young, mixed veggies and bok choy .  Very good and I was so stuffed, I couldn’t believe it!  I did have a nice plate of melon after but forgot to take a photo… 😦

So that’s about if for me for What I Ate Wednesday.  By the time you’re reading this, we’ll be on the road to California…at least we’d BETTER be!!

WIAW~Parties and Real Life

I’d like to say…Ok…it’s What I Ate Wednesday!  Whether it’s a full week or a slow week, filled with parties or just real life, Wednesday means one thing, the fantastic party hostessed by Jenn at Peas & Crayons!  After feasting your eyes here…hop over there to drool and leave a few comments.  It is the best fun.

What I Ate Wednesday Sensible Snacking

Again, we’re supposed to be talking about sensible snacking.  I think I’m failing again although, I have been making overall good choices.  I think if I think too much about snacks, then I want them so here’s this week for me.

Favorite new snack…sunbutter on caramel corn rice cakes…Yum!  Filling, too.

My Sunday ice cream, much smaller this week for which I am proud of myself.  A small cup of coffee and butter almond…my two favorites!

This could be a lunch or snack…it was in that mid part of the day…pineapple Greek yogurt, Fiber One and a good book.  Great combo in my opinion!

It’s great when you make a Mega Salad for a party, then get to bring home the leftovers…

Add a Morningstar Farms tomato basil pizza burger to it and it couldn’t be better.  I now have bottled dressing to finish up before I start back to making my own again.  This is pretty good and only 1 gram of fat per serving.

The very last of the salad with sunflower seeds, pumpkin seeds and crock pot black-eyed peas added.

The Big Purple Bowl is getting a work out!  Shredded cheese added-Aldi has their 2% cheese available again, Hooray!  A combo mixture of light balsamic and lite catalina…Tangy and Tangy!

So that’s What I Ate Wednesday for this week.  Nothing really unique or out of the ordinary.  Still it feels like a pretty good week so far.  I’m still trying hard to stay on track for Weight Watchers.  I think after my good loss on Saturday, my momentum is up and running.  Too bad I’m not up and running!  😉

Bracing for Another Birthday

I get teased a lot on BCDC regarding the fact that there seem to be so many birthdays in our family.  Well, brace yourself, Cookies…we’ve got another party today!  You’ll get all of the details tomorrow but for now just a few little tidbits.

I have long loved peanut butter on plain rice cakes.  Recently…

I’ve been getting the caramel corn rice cakes at Aldi and combining them with Aldi peanut butter.

The combo is SO good and I’ve had it the last 3 days in a row for lunch.  Something about the flavor combo I just love!

When I made my veggie combo on Thursday night, I remembered how much I enjoyed having grains, especially in salads.  I remembered that I had some bulgur wheat in the cabinet that I had never opened.  So….

“Cooked” it up.  Really all you need is 1 cup of bulgur and 2 cups of boiling water poured over the bulgur.  Just let it sit for about 15 minutes and it’s ready!  Made a salad of romaine, bulgur, celery, black beans, green and red bell pepper, scallions, celery and shredded cheese. 

Standard dressing with Dijon mustard.  Such a good dinner!  Very filling and healthy as can be.  Just found wasabi mustard in the fridge…forgot it…duh!  Can’t wait to taste dressing made with That!! 😉

Hopefully things go well at Weight Watchers.  Then I get to celebrate at the birthday party!
