WIAW~November 6~So It’s Fall

I love the Fall.  Ralph is all enthused about the colors.  I need to get outside with my camera to get some photos before it all goes away. But in the meantime…let’s do Fall foods.  My foods don’t really seem Fall-ish to me.  Haven’t started soups yet.  I need to get on that. What I Ate Wednesday: FALL into Good Habits

My food is a little all over the place this week, so try to stick with me.

Filled with my go to breakfast of bran flakes, Fiber One and vanilla soy milk.  This is my first time trying vanilla soy milk.  Doesn’t taste that different from plain.  Tasty nonetheless!



One of my crazy one dish meals of crock pot lentils, quinoa and green beans topped with Romano cheese. Actually photographed on my lap while I sat on the bed watching TV.  Too much info?  It was delicious…that’s the info you need!

A tasty spinach, feta, egg and various veggie salad at a diner we don’t often go to.  I really enjoyed this.

Overnight oats topped with crock pot apples.  A half cup of oats, third of a cup of fat-free vanilla yogurt, half cup of vanilla soy milk and lots of cinnamon.  I like to heat mine in the microwave.  One minute, then put the apples on top and another 30 seconds. Perfect for me!  Need to make more crock pot apples.  I always finish them off too quickly!

Last but not least is breakfast at one of our favorite diners after Ralph’s doctor’s appointment. Tomatoes, green peppers, onions, mushrooms and asparagus omelette.  So good.  A side of cottage cheese…a flashback to last week!

Fall Is All Around

This should probably be the title for a post filled with beautiful fall pictures.  It’s not but it was a good day anyway!

Started out at Weight Watchers.   I only lost a quarter of a pound, but that was ok.  I lost and I’m getting back on track again, which may not seem likely by something I’ll be showing later, but what the heck!

First I want to show you a protein packed dinner I made for myself last night that took 5 minutes to put together but was delicious.

I sautéed a red bell pepper, then when it was partially cooked, I added a cup of black beans, the last of what I made last week.  I mixed together 2 eggs with a little milk to thin it out and a half cup of low-fat cottage cheese.  Mixed it well and poured it over the pepper/bean mixture.  Stirred it around a bit for the eggs to cook then topped it with some Locatelli cheese.  This was so good and had 3 sources of protein.  Very filling too.  I should try for things like that more often.

Saturday morning after WW, got back into our routine and Gail, Alice and I went to breakfast.

Ralph and I went on a mission to sell an antique platter to a shop in Mullica Hill.

Turned out that she didn’t want it because she only takes perfect pieces, this had a small repair.  It was packed away so long, I didn’t remember about the repair.  We took it to our friend’s shop and they took it on consignment, so we’ll see what happens.

Slightly bummed because of this, what do we do…

Eat Pizza!  This was really good counted for lunch and dinner, so I don’t feel too bad about it.  Now if it hadn’t tasted good…I’d be really disappointed!

So I didn’t get any work done on any sorting and didn’t find anything old and interesting.

But after a nap-still catching up on sleep from the other night-I made a crock pot full of apples!

Well…the apples were old…does that count?!  Besides, they work great for snacks and they’ll help me stay on track in the week to come.

I absolutely do feel like I’m on a roll with this sorting and packing thing.  Only took me since January when I put it on my list of things to do in 2012.  Better late than never??? 😉

Hits And Misses

One of the things about writing a healthy living blog is that you examine your food more and think about it more than a normal..uh…Regular person does.  Thinking about it, examining it, planning it.  It all happens much more than I might have thought.

The other day when Ralph and I went to lunch, I ordered an omelette for lunch not realizing that if it came from the lunch menu, it would come with extras.  It came with a side salad and I really was in the omelette mood rather than the salad mood at the time.  I asked the young lady to wrap it for me to take home.  She did.  I didn’t however, eat the dessert that came with it…a certain little cowboy did…Sherriff Ralph to the rescue.

A few additions from the fridge.  The very last of my Romaine…gotta get to the produce market!  Home made black beans, green bell pepper and shredded cheese.

It came with ranch dressing which I mixed with light balsamic vinaigrette.  Very tasty.  A Hit! 🙂

I’ve been telling you lately how much I’m enjoying my oatmeal/oatbran combo  plain with Splenda and almond milk.  I decided to experiment on Wednesday and well…

I decided to add some fat-free vanilla yogurt in place of the almond milk.

It was a little too tangy, even with added Splenda.  I thought it would be more vanilla flavored, but sadly not.  I ate it anyway, it wasn’t dreadful and I wasn’t about to waste it.  I’ll be going back to plain and simple today, I think.  A Miss. 😦

All day Wednesday I had a nagging headache.  Ralph was set for dinner with leftover crock pot roast, so I needed to find something that would be simple, but filling because I felt that otherwise it would be a grazing night…constantly looking for something to snack on.

Whole wheat pasta, home-made black beans, diced tomatoes with green chilies and Parmesan cheese.  Very simple.  I should have added a few more spices, but…

It was tasty and filling.  Another vote for having beans made and ready…it makes coming up with a meal so much easier!  A Hit! 🙂

Sadly, the headache is still with me this morning.  I’m thinking it may be because I had no coffee yesterday…I know that can do it.  I’m drinking some right now hoping it will help.  No change yet, but I should have thought of this yesterday…Miss… 😦

WIAW~What A Crock!

Peas and Crayons

I have to admit that I felt my post on BCDC yesterday was boring.  Hmmm…I hope today’s will not have that stigma.  But who cares…It’s all a Crock anyway!!  I mean that in a good way! 😉

This post had a few glitches or at least one and that came at the end of the process. 

To start with, some months back I stopped at one of my favorite thrift stores.  There was a sign in the window that is one of my favorites I’ve ever seen in a thrift store.  It read, “50% off anything with a plug!”  I loved it.  I didn’t really think I’d come up with anything.  I was wrong!  This is the treasure I found…

It’s a 1 quart “crock-ette!”  Love the name.  The sticker said $5 so that means I got it for $2.50!!  Well, this little baby rode around in the back of my car for quite a while.  Finally, I decided I needed to give it a try.  I had gotten a lot of fruit in a basket for Christmas, mostly apples and pears.  The apples were fine, but the pears were getting too ripe.  This was a perfect job for the crock-ette.  I pulled it out and wiped it all down.  Usually this small type of crock pot does not have a removable crock.  To my pleasant surprise, the crock IS removable! 

I chopped up the pears and one apple that did need to be used…

The pears were extremely juicy and were very easy to peel.  I chopped everything up, added 2 packets of Splenda, some cinnamon and a 1/4 tsp of nutmeg.  A few hours later, I had this…

The smell was incredible and it even woke up Ralph!  Next time I will adjust the spices, but overall, I love it!  I put it in a container and stored it in the fridge.

Tuesday morning I was ready to use little crock-ette again.  My friend Wendy from Weight Watchers had told me that she makes steel-cut oats in her little crock pot.  I thought I’d give it a try.  I’ve had a container of steel-cut oats for a while but haven’t used them because most people say you need to cook them stove top and I’m really more of a microwave girl lately.  But I thought I’d give it a try!

Wendy’s recipe calls for 1 cup of the steel-cut oats and 4 cups of water.

It just fit!  I stirred it up and let it go.  Wendy had said that for her, 1 hour and 45 minutes was the perfect length of time to cook it.  Well, I’ve said this before regarding using a crock pot…every one is different.  I always explain that when I talk about cooking my beans.  One hour and 45 minutes passed..2 hours and 45 minutes passed…on and on.  I know that opening it slows the process, but I wanted to be sure it didn’t burn. 

Finally…5 and a half hours later, my oats looked like this…

Done!!!  I was so excited.  I pulled out my cooked pears and apples I had made the day before and warmed some in the microwave.

Ta-Da!!  It looks a little watery but that’s from the juice on the fruit.  I tried, honestly I did to make this look all pretty and professional.  But you know what?  I don’t really care.  It Tasted Good!  Something I’ve learned since I started BCDC is that, it may look terrible, but if it tastes good…that’s all that counts.  This was delicious.

I learned some lessons with my little “crock-ette.”  I’ll do some things differently next time and I’m already working on some other tasty things I can cook up in it.  I love it when I can get good use out of something that I paid so little for!

So that’s WIAW from my side of town.  Not as much food as usual and I guess it really shouldn’t take 2 days to make 1 breakfast…acutally it will make 4 breakfasts because I had enough oats for a total of 4.  Be sure to stop over at Peas & Crayons, look around and let everybody know how much you enjoyed reading about all of the wonderful food ideas.  I’m going to go look up some more crock-ette recipes!

We Need A Little Spirit…WIAW!!

Peas and Crayons

I’ve been bemoaning my lack of Christmas spirit.  It has come and gone and come back again.  Brought back by a strange thing, but first…The Eats!

I’m one of the on the run people.  I am dazed and confused and have had No fun foodie events to attend yet.  Mine will all come over the weekend and during the week next week.  You better know you’ll need to check out my food goodies Next Wednesday!

Oatmeal with cinnamon and home frozen blueberries.  My Favorite!  Added some almond milk and it was scrumptious!  So good that I had a repeat performance of it this morning!

Definitely on the run…

My favorite quick “I’m starving and I don’t have time or energy or a Clue” lunch/snack.  Gala apple with almond butter (fill in the nut butter.)  So yummy!  I’m so glad that the Gala apples I got at the produce market were good.  Sometimes the apples there are not the best, but these were Great!

Fixin’s for a wonderful salad in my Big Purple Bowl of course!  Romaine, tomato, bell pepper, garbanzo beans, bulgur (last of 😦  ) and shredded jack cheese combo.

I’ve decided I’m going to try to stay away from bottled dressings and make my own.  No mystery ingredients and it’s probably less expensive too.  I combined 2 Tbsp of olive oil, 2 Tbsp of balsamic vinegar and 1 Tbsp of cranberry honey.  I added a little ground black pepper and Wow was that delicious.  It made just enough for this big salad without leaving a lot of left over in the bottom of the bowl.  I’m going to continue making my own.  Some variations will be fun to figure out.

Now on to what brought back my Christmas spirit.  Sounds crazy, but shopping!  I hate crowds especially this time of year.  I had 2 stops to make…first Kohl’s where I was excited to find something that I wanted for a particular person that I had given up on finding (although Kohl’s is where I found it before.)  That made me very happy. 

Then I went to my Happy Place…

Yes…Barnes & Noble!  I had to go there for gift cards.  I decided that I was going to enjoy the visit.  I got myself a sugar-free, fat-free latte which was made wrong but I enjoyed it never the less.  Just strolling around the store made me feel better.  I did some Nook Looking.  I’ve been saving and may decide to get one.  The young lady there explained a lot of things to me which really helped.  I’m still thinking about it.

I don’t know why, but it has turned my mood around.  I think I can do this.  I sound like Bill Murray at the end of “Scrooged.”  That is a wonderful Christmas movie…if you’ve never seen it…Get It!!  One last fun thing to share with you.

Zombies 2012!!  I love it.  I really need to start thinking about getting into Zombies…it seems everyone else is!  Maybe it will be my new thing for 2012!

Happy to Be Productive

Some days I feel like I’m wasting my time.  I love it when I feel like I’ve been productive.  After posting on BCDC I needed some food!

I loved my oatmeal with the cranberry orange relish so much over the last few day, I decided I should repeat it.  It was especially tasty today!  Filled me up for a good long while.

I was working in my bedroom.  I have boxes of clothes that are wrapping dishes.  I needed to get to the dresser behind the boxes in hope of finding 2 pairs of jeans I’ve been looking for.  I was also looking for a set of dishes that I had decided to give to my sister, Ele.  I got the boxes moved out and opened the doors of the dresser.  The drawers were Empty!  I had emptied them and packed what was inside.

After that set of boxes I was frustrated and hungry.

Another of my honeycrisp apples with some Peanut Butter & Co. cinnamon raisin swirl.  So good together!

There were other boxes in front of my closet and I knew the dishes had to be in those boxes.  They were also wrapped in clothes.  I found the dishes I was looking for, got them unwrapped and packed into boxes to take to Ele.  There were so many dishes that the clothes from the 2 plastic bins did not even fill one!  That was actually good because it gives me a little more room in the bedroom and give me another bin to use for packing.  AND in the bottom of the second bin were the two pairs of jeans I was looking for!  I was excited!  Now of course, I’m not sure they still fit, but they give me something to use as incentive! 😉

When Ele got home from work, I transported the dishes to her house.  She was very excited!  She didn’t remember the dishes so they were a treat for her.  I had some things in my car for her church’s rummage sale tomorrow.  We rode down to the church and toted everything in.  Susan, the other lady that works with us on the rummage sale was there and we worked for about an hour and a half.  We got a lot of what I brought sorted out and ready for tomorrow.

I’m looking forward to my Weight Watchers meeting tomorrow.  I had a gain last week and I’ve been working really hard this week in hopes that I’ll have a good result.  We’ll see how that goes.

There was a beautiful sky this morning and I wanted to share it with all of you.

A New View

It seems the view I see most often these days is the screen of my laptop. 

Sometimes there’s a flash…

Sometimes there’s not..I can’t decide which I like better, so I decided to share both.  This was my attempt at creatively showing you my oatmeal from Friday morning.  I’m not quite sure why my bowls of oatmeal or oatbran never looks as appetizing as the bowls on other blogs.  Maybe because they cook theirs stove top style and I’m a microwave kind of girl.  Maybe because they have more space to set up their shots.  Maybe they have better cameras.  All of these things could be true.  Or it could just be that they’ve been doing it longer.  I don’t know.  Doesn’t it matter the most how it tasted after all?  I think that’s what counts.  My oatmeal tasted Yummy!  It was a mix of 1/2 cup of oats, 1 1/4 cups of water, 1/2 a pack of Weight Watchers French vanilla smoothie mix and lots of cinnamon.  Microwaved for three minutes and then 1/2 cup of soymilk and 3 packets of Splenda.  It was warm and tasty and kept me working, which was what I needed it to do.

After posting on BCDC and eating breakfast, I got back to work on my NaNoWriMo project. I seem to be saying that a lot lately, but it’s true.  That’s taking up a lot of my time.  The good news is as unlikely as it may seem…I’m actually getting there.  I’m completing the task.  I like saying that.  I got in 3359 words yesterday.  It didn’t feel like I’d get that far.  Then I looked at my word count.  I only needed a few hundred more words and I would cross the 40 thousand word mark.  It was a challenge I decided to accept and meet.  My total word count for Friday was 40,261!!  I’m rather amazed myself, so feel free to have a shocked look on your face.  I won’t be offended. 😉

Mid day my snack was one of my new favorites…

Sunflower seed butter and honeycrisp apple.  Such a good combo.  I’ve eaten so much of the sunflower butter that soon I will be faced with the joy of overnight oats in a sunflower seed butter jar.  I’m really looking forward to that.  Only problem will be that then I need to find more sunflower seed butter that I can’t seem to find around here.  I guess a pilgrimage to Trader Joe’s will be in order!

Saturday morning found me at Weight Watchers of course.  The WW stars were shining on me today.  In spite of eating out 4 times this week to celebrate 2 different birthdays I was able to stay the same.  I really had no idea when I walked in what the result would be.  I was most grateful and will work harder this week.  Now that I’m doing so well with my word count for NaNoWriMo, maybe I can fit some exercise in this week.  That’s my plan.

After WW, of course Gail, Alice and I headed to breakfast at the Gateway Diner.  I ordered my usual, scrambled eggs with sliced tomatoes.

Sadly, I think the reign of the tomato is over.  These were pretty anemic looking.  Maybe I’ll ask for fruit or my other choice of cottage cheese. I’ll have to wait until next year for nice ripe tomatoes again. 😦

I’m going to try to get even further ahead on my writing today.  I have 11 days left until I need to finish, but it doesn’t hurt to get some extra words in.  That way I won’t have to worry about doing it on Thanksgiving day if I don’t feel like it.

BTMH Thursday

Ralph and I were both up early Thursday morning to get ready to go to a funeral.  Funerals are sad and this was no different except that it celebrated a wonderful long life.  Of course, as we left our house, the skies opened up again and we were drenched just getting to the car.

Ralph’s friend, Bob from his days in the detective bureau had always treated us as part of the family.  Because of that we got to be very close with his parents.  When we would go to their parties, Bob’s parents would always grab Ralph and Me to sit with them.  It was always a good idea.  They were both wonderful, gregarious people and I loved listening to their stories.  His Dad passed away a few years back and we were so sorry to hear of his Mom’s passing this weekend.  She was 96 years old and she will be missed.  I feel that it was such a privilege to know Her and Her Husband.  They were the best.

Ralph and I had previous plans to meet his sisters and cousins to celebrate his cousin, Kathie’s birthday.  When we left the visitation, it was too early to go to the restaurant and we didn’t think we could wait for something to eat.  We thought we’d stop at the Gateway Diner for some coffee and a quick snack.

We each had a bagel that definitely qualifies for BTMH (Bigger Than My Head) and cream cheese.  A bit pricey (Point wise) for a Thursday, but I didn’t want a full breakfast.  With coffee, it hit the spot.  Next time, I think I’ll choose an English muffin!

We made a quick trip home because we were still too early.  Lunch was planned at the Adelphia Restaurant for 12:30pm.  As I’ve mentioned before, I have a sort of love/hate relationship with this place.  It moved to the love side yesterday.

Unfortunately, this is not on their regular menu, just the lunch menu.  I think I’ll whine the next time I go to see if I can get it again.  It was a caprese salad.

It was so big…second contender for BTMH today!!  Lettuce, tomatoes, cucumber, fresh parsley, fresh mozzarella cheese and balsamic vinaigrette.  It was so good, I almost licked my plate!  Tough trying to figure the Points on this, but I did my best! 😉

Ralph and I were both full and didn’t even think about regular dinner.  Lucky for me, I had made overnight oats but didn’t have time to eat them in the AM.

Just In Time

Sometimes I’m a little late to the party.   Yesterday I was just in time.

For several months, I’ve been reading about What I Ate Wednesday sponsored by Peas & Crayons. I never participated because I never bothered to read the rules.  I had already posted yesterday (with a really good food day) when I read the rules and realized that the food I posted didn’t have to be From a Wednesday, just posted On a Wednesday.  So I joined in!!

I’m so glad I did!  It was fun and I enjoyed reading what all of the other bloggers were up to.  I didn’t get through all of them, so I have more to look forward to today.  I like the idea, it helps us feel that we’re part of something and not just posting out into the abyss.  I also noticed people coming to BCDC from Peas & Crayons.  We’re all in this together and it’s great fun!

Wednesday sort of slipped by. The only meal I documented was my dinner.  I was on track, having my overnight oats in the morning…I do love them!  Blueberries and strawberries made them special.

Dinner…which I again had late to try to keep myself from snacking.  That seems to be working for me.  On to the Salad!!

I remembered there was still some pasta salad left over from Saturday’s party so I added that.

One luscious cup of protein…my lovely pinto beans.  With some balsamic vinaigrette added, it was the perfect meal.  Good thing my Purple Bowl is so Big…that’s a darned big salad I’ve got there.  Sometimes they feel like I’ll never finish them, but I always do.  It’s such a healthy and filling thing to have for dinner.  And there are so many variations I can make.  I love it!

I’m up early today.  Sadly, we have a funeral to go to this morning.  Then we have a birthday lunch to go to after.  I’m off to get myself ready.

Back On Track and Raring To Go!

After what could be called a “challenging” food Weekend (no, ya’ Think?!?) my plan was to get back on track with my eating and with exercise. 

If there’s one thing I’ve learned from Weight Watchers, and something I always tried to tell my members when I was still a leader, Do Not let a challenging day or even a challenging week get the best of you!  The difficulty with that is, sometimes you can convince yourself that is the way to approach it and sometimes you can’t. 

I have to admit, I was really down after facing my gain on Saturday.  I had been doing so well over the last few weeks with small but steady losses.  That smacked me in the face.  I suppose that might have been what I needed!  I also admit that I was not as good as I could have been at the wedding and it seemed to carry over to Sunday.  😦  😦   😦

But I am back and I will get this under control!  I have to get both my mind and my body back into this. 

Monday morning I got dutifully on my exercise bike (as I always do…) and instead of my usual 30 minutes I did 45 minutes.  My housing arrangements are not as conducive to exercise as some other house may be or as my NM house will be.  This is where I do my exercise bike…

Cramped, right?! Messy, Right?!?  Yes to all.  I’ve never had a lot of room, that’s the way it is in a tiny house.  Now with the packing I’ve been doing and nowhere to put what’s been packed, it’s very…shall we say cozy.  But it does the trick!  The mile counter on my bike died several years ago, so I have no idea how many miles I’ve done but 30 minutes a day, 6 days a week (sometimes more) adds up.  Looking to the positive, I suppose I should give myself credit for that. 

 I’m going to try to keep up with the 45 minutes every morning.  I should probably try to add in some walking in preparation for the Relay For Life next week.  I need to figure out how to work that into the day.

I was on track for food yesterday too.  I had oatmeal with almond milk for breakfast.  I hadn’t had plain oatmeal for a while because I was concentrating on oat bran.  I’m almost out of oat bran and I have a lot of oatmeal so I went with that yesterday.  I enjoyed it!

Dinner was stir fry of the day!

Asparagus, yellow squash, zucchini (missing in action), veggie broth, Locatelli cheese and my wonderful crock pot black beans!

All served on leftover couscous.  It was really delicious and extremely filling.  So much so that I did NOT snack at all last night!  I’m really proud of myself for that.  I guess it helped that I fell asleep… 😉 but nonetheless, I didn’t snack!! 🙂

Today I’m going to do my best to add exercise in.  I wear my pedometer daily.  I wear it while I ride my bike.  I get conflicting views regarding the steps that the pedometer counts while riding on the bike.  I chose to count them.  I try throughout the day to march in place whenever I can.  When I’m cooking, I march.  While I’m doing the dishes, I march (ok, I splash sometimes, too 😉  )  It adds to my steps.  I try to do it while I’m watching TV in the evening.  Glee is on tonight and that’s a good one for marching.  The music is all peppy and gets me going.  That’s part of my plan. 

Hopefully, I’ll be going for produce today because I’m OUT OF FRUIT!! Oh, No!!  That will be a help too.
