What I Ate Wednesday: FALL into Good Habits

This was a fun week but not one I’d necessarily confess to my friends at Weight Watchers.  Regardless, it was an interesting mix of things.

I give you a Tower of pumpkin pie yogurt.  Aldi had these two weeks ago and I bought 2 because it sounded good.  You can never be sure with these specialty flavors…sometimes they’re good, sometimes not so good.  This is delicious and the next time I was there, I had my fingers crossed that there would still be some left.  Yes!!  I’ve been going through these pretty fast.  It’s very tasty!

Another pumpkin shot.  Ok, I realize that it looks like an empty IHOP coffee cup.  It is.  But where there’s IHOP…there’s pancakes…and for me this time of year it had to be pumpkin pancakes.  I did ask for them with no whipped cream and I used the sugar-free syrup.  They were also delicious! I’m so glad there’s Not an IHOP closer.  That would be dangerous.

One afternoon last week, Ralph and I decided to go to one of our favorite nearby Italian restaurants.  Usually, we only get salads or sandwiches. But this was late afternoon and almost dinner time so we decided to have a real dinner.  We were both Very pleased.  I started off with a salad.

This was huge for a dinner salad and it was delicious.  I got it with the balsamic vinaigrette.  So good and really very filling.

This is their bread with the seasoned oil.  This bread is So delicious, I could go in for just that.  Always crispy on the outside and soft and fresh and warm on the inside.  Yum.

Finally we get to dinner itself.  I’m usually pretty much a pasta girl but their special that night was Gnocchi Siciliano.  This was basically gnocchi, which I’ve never had before, with eggplant, tomatoes, a creamy sauce and CHEESE!  It was amazing.

I only finished about a third of it.  I took it home and had it for dinner the next night.  This was so good and so over the top as far as trying to figure out the Weight Watchers Points that I think I wrote down 15 Points for it the first night and 20 Points the next night.  At least I’m honest when I write down my Points…Good or Bad…I write them down.

WIAW~Between Parties

When you’re having a Birthday Month, there are times when you’re between parties.  Not so exciting for What I Ate Wednesday, but I’m sure that there will be lots of people over at Peas & Crayons with Jenn who’ll be showing lots of exciting food.  For me this week, it’s kind of plain and simple.

But regardless, It’s a Party!

No real snacks included and I’m not into Halloween yet, so what you see is what you get!

As I’ve said before, being the person who brings the Big Salad to a dinner means I get to go home with the left overs!  Love it when there’s a big bowl of salad to be had at any time.  Fills me up and keeps me on track!

Pineapple Greek Yogurt with Fiber One.  Such a good breakfast and one of my favorites!

I’m continuing my quest to put EVERYTHING over sweet potatoes!  Microwave 2 sweet potatoes for 8 minutes and they are just perfect.   I sautéed onion, garlic and yellow squash in veggie broth, then added something I will never eat again. I found lost in my freezer a partial bag of Morningstar Farms “beef” strips.  They don’t make them anymore so this was a little sad.  I then added a half cup of cottage cheese.   Added some various spices (I’m always SO specific with my recipes!!) and that’s it.  It was very tasty and just what I needed since it’s been so cold out.

Simple as can be…pomegranate kefir and Fiber One.  Guess I really like my Fiber One…huh?!

None of this sounds very exciting I realize but for me it’s great.  I feel that I am on track and making good choices.  After feeling out of control for a while…this is a much better way to be!  Besides…there are still more celebrations to be had throughout the rest of the month!

WIAW~I’m Walking The Walk

I’m feeling strong and focused about this Entire food choice thing.  I’m feeling that I AM back on track and will continue to be.  Now of course, I know like all of you know, it will happen again at some point in time.  As long as it doesn’t happen TOO often and as long as I don’t need to pay anything to anybody (Weight Watchers) on Saturday, we can all remain friends!! 😉

But of course we know why we’re here today.  Disneyworld may claim to be the happiest place on Earth (we all know it’s actually New Mexico 😉  ) but the happiest Day of the week is Wednesday…Why?? What I Ate Wednesday, Of Course!!  It’s the fun and games thought up by Jenn at Peas & Crayons.  She just lets us play along!

Peas and Crayons

Our theme is still Fall Into Good Habits.  I guess I’ve been falling Back into good habits and I am feeling so much more focused and pleased with what I’ve been doing.

On Sunday night, I made something that does not photograph well, but was very tasty.

I sautéed up onion, garlic, zucchini and spices with a can of Ro-Tel fire roasted tomatoes with green chile.  When it was all cooked, I stirred in a cup of cottage cheese.  It got all bubbly and gooey and I then poured it all over previously prepared quinoa.  This was quick and delicious.  It’s great to have some grains cooked up and waiting in the fridge rather than me waiting for them!

Monday could have been a slip but I didn’t let it be.  Ralph and I took his son Bill out to breakfast for his birthday.  I chose wisely.

One of my favorite things…a spinach and Feta cheese omelette with sliced tomatoes.  Very good.  This was my first omelette at this diner and I was pleased.

Breakfast on Tuesday was fat-free vanilla yogurt topped with Fiber One and fresh strawberries.  Delicious.  Love my little stoneware bowl which I got from the “free” box at the church rummage sale!

Lunch was an old favorite…

A quick salad of Romaine, carrot sticks and 1 cup of reduced fat cottage cheese topped with Mrs. Dash Fiesta Lime.  Very tasty and filling.

So what does any of this do with my title-Walking The Walk??

After almost 2 months absence due to traveling, I pulled on my sneakers and got out the door for a walk this morning!  I didn’t do the full route I had been doing prior to leaving, but I did about 3/4 of it and it made me very happy.  I feel better for having done it and happy for being back in my routine again.

Second Breakfast Day!

Without even knowing it…I fell into a tradition.  Apparently Friday was Second Breakfast Day.  That of course is a Hobbit tradition.  I feel sorry for any of you who are not familiar with The Hobbit or The Lord of the Rings.  I am not a mad, crazy fan like some people I know (who will remain nameless so that I’m not drummed out of the family) but because of my love of food, I certainly can be comfortable with the idea of Second Breakfast!

In my efforts to get myself back on track with my eating, I actually put together some overnight oats last night.  My usual combo- 1/2 cup oats, 1/3 cup Fat Free vanilla yogurt, 1/2 cup almond milk, frozen blueberries and cinnamon.

After a minute and 30 seconds in the microwave (I’m really not a fan of them cold, although I will eat them that way if I have to) I added fresh strawberries.  I really need to get myself organized to make this more often.  I just have to plan the night before.  I enjoy them so much.  Need to come up with some variations, too.

I had finished my oats and was doing some chores when Ralph said, “I want to go out to lunch, where would you like to go?”  It was 11am!  Now, I always have to consider the fact that I’m weighing in on Saturday.  I decided I could go to the diner, have breakfast and not do too much damage.

And without knowing it…I was celebrating Second Breakfast Day!  I had a spinach and American cheese omelette with sliced tomatoes and dry rye toast.  It really was very tasty.  I often will have an omelette at a diner for lunch or dinner.  It’s easier to calculate the Points for this than it is for some other menu choices.  Besides…I really like omelettes!  And it was actually a lunch special today so I got a side salad to bring home and Ralph got my dessert…vanilla cake.  All were happy!

I am so glad to be back in my salad routine again.  I know I’ve been whining about veggies and salad…but they make me happy.  Started by making something I haven’t made in a while.

A big pot of quinoa cooked up in veggie broth…Yum.  I love adding this to a salad, but I’ve fallen out of the habit of making it.  Like getting that extra protein punch~

Oh, was I happy with this!  Home made dressing-olive oil, balsamic vinegar, honey and Dijon mustard.  The salad was Romaine, shaved carrots, green and red bell pepper, plum tomatoes, black beans, quinoa and shredded cheddar.  It was SO good!!  It was filling and helped me stay on track.  Another thing that I did to help stay on track-while I was getting the carrots ready for the salad, I peeled and cut some up for snacking later.  Also need to do that more often.

Funny how we fall in and out of the good habits we’ve developed.  I plan on staying On Track and hang on to those good habits.  Hoping for a good result at Weight Watchers today.  Happy Second Breakfast Day!

Feeling Full…Of Veggies

I was complaining yesterday about the lack of veggies (and fruit) I consumed on my two recent trips.  I worked on correcting that today.  I headed off to our local produce market to do some stocking up.

Red bell peppers, Gala apples, bananas and strawberries.  I also got onions (which for some reason I always forget to buy), plum tomatoes and more Romaine lettuce.  I still have some Romaine from before the Atlanta trip but it needs serious pruning to be useful.  Didn’t want to be without so I had to get more!

Made a stop at Shoprite and picked up these.

I keep hearing so much about the apple cider vinegar cocktail.  I never thought that Shoprite would have the Bragg’s but they did.  Since I can’t find Kombucha bottled, I decided I should give it a try in tea bag form.  My plan is to make the tea tonight and it will be cold for morning consumption.  Should be interesting to see what happens.  I’ll keep you posted on this.

After my shopping trip, I had a banana and Shoprite brand Greek yogurt with honey.  This brand is so good and was on sale for 88 cents, much cheaper than Chobani and very tasty.  It was as filling as I had hoped.

Lunchtime came and I was glad I had finally remembered to get cottage cheese.  It really is a protein bonus-15 grams for a half cup and only 2 Points on Weight Watchers.

I removed some of the sad and droopy leaves from one of the leftover heads of Romaine to get to the good part. Chopped that up with too older plum tomatoes.  Topped with the half cup of cottage cheese, chopped jarred jalapeno and sweet pickle relish.  Of course I also added (as always!) enormous amounts of ground black pepper!  This is one of my old favorites and very filling, too.

I’m feeling more back on track now and I’m hoping for a respectable result on Saturday at Weight Watchers.  I’ve felt so off track since we got back, but I’m doing my best to focus on the tasks at hand-both regarding food and projects.  There’s just so much to do…I need to Inspire Myself!

When I got home from my shopping chores, I find this on the bed…

Ralph confirms that it’s me…I know my hair is short but it’s not That Short!!  Guess I need to grow it in a bit to not see this again!

Staying The Course

Onward with the good choices!  I feel like I’ve been really on track this week.  I’ve used almost all of my Weekly extra points but at least I’m counting and I have an idea what the outcome will be.  Actually, I will be Very upset when I get to Weight Watchers this morning if I do NOT have a loss.  I’ve worked very hard.  But I feel in control and that’s what counts.

I mentioned that I was going to show you a special treat that I used to make for my lunches when I was working.  Well, I guess it’s not a “treat”…it’s a salad, but that’s always a treat to me!

It started like this…

One cup of black beans freshly out of the crock pot.  1 cup of frozen corn, defrosted.  However much I felt like of salsa.  I used a store brand and probably about a cup and a half, but it’s your choice.  I added some garlic powder, some ground black pepper and a bunch of Mrs. Dash Fiesta Lime.  I also like it with green Tabasco sauce, but I was out so I improvised.  Mix it all together.

Chopped up a big bowl of Romaine lettuce, topped it with the mixture, then some shredded cheese.  This is so simple and so good.  It really is a good lunch to go.  I would cut up the lettuce in a container with the cheese on top.  In a separate container, I would put the bean/corn/salsa mix, then mix them together when it was time to eat.  It was such a tasty treat when other people were paying way too much for inferior cafeteria food.  I got so many comments over the years from people saying how good it looked.  It does and it is!

Friday’s breakfast was something I haven’t done in a while…a breakfast parfait!

I layered Fiber One, sliced banana, sliced strawberries and fat-free vanilla yogurt.  Loaded it all in an old glass measuring cup that was my Grandmother’s.  I have two of them and they’re perfect for this type of thing, kind of cool too.  So tasty and such a good start to the day!

Do you think I liked it?!?!  Yup…

Friday’s lunch was the end of the line for the egg salad I made this week.

Just chopped up some Romaine and loaded on the salad topped with some ground black pepper and chopped up sweet pickles.  This was so good. I like the combo and I think I need to make egg salad again Next week.  Oh, wait…I’m going away, guess I better come up with another game plan!

Keep your fingers crossed for me at Weight Watchers today.  I’m hoping for the best.  Then I get to go to Ele’s church rummage sale.  That’s always great fun…maybe I’ll find some Treasures!!

Tick Tock~In The Crock

I just love my breakfasts of Greek yogurt and Fiber One!

It is filling and with 14 grams of protein, you can’t go wrong.

Started early by pulling out Crock 1.5 to make some sweet goodness.

Chopped up apples and pears, sprinkled with apple pie spice and pumpkin pie spice.  Also added some cinnamon, but forgot to put it in the photo!

All mixed up and ready to cook!!  Can’t wait to eat them up tonight!

Next project using Crock 3.o…

Black beans about to go in for their soak bath before they get cooked tomorrow.  I’ve promised the black bean burger recipe and results on Monday.  I know, I know…I could use canned black beans, but I like the home-made ones so much, and it’s really so easy, why not.  You just have to remember to be prepared. 

First step under way!!  They’ll be ready to start cooking in Crock 3.o tomorrow morning, then it’s black bean burgers here we come!

Not sure what will happen at Weight Watchers Saturday morning.  It’s felt like a bit of an off week.  Sleep issues can have a bearing on my results on the scale sometimes.  I don’t know why.  All I know is, whatever the result, it won’t stop me from continuing doing what I do.  I can always work with the result and go on from there.  As Ralph likes to say…Lift and Shift!  Besides, there are black bean burgers in my future!!

WIAW~Snack Attacks-Snack or Meal?

You know that every Wednesday whether I’m home or away I NEED to be part of a unique party… What I Ate Wednesday the fabulous brain child of the lovely Jenn from Peas and Crayons. Peas and Crayons

Now seriously…I’m always moaning about trying to stay away from snacking so I’m miserably unprepared for this.  However, since I have all of June to deal with it, I’ll work with what I have and start here. Regular food mixed with snacks and regular food that is Great as a snack!

Overnight oats with blueberries and cream Spiru-tein mixed in topped with fresh frozen blueberries.  So delicious and filling.  This could work as a snack.

Greek yogurt with honey…sometimes breakfast, sometimes lunch, sometimes a snack!  I love this brand and it was on sale yesterday…Ok by me!

One of my favorite meal/snacks…rice cakes with peanut butter.  Tasty, filling, protein and good fats!

It was breakfast, but it could be a snack…Dunkin’ Donuts veggie omelette flatbread with the always beloved iced coffee.  We had coupons and a gift card.  Worked out well! 😉

Big salads can be a snack, when they’re this size though…they’re usually a meal! 😉

Another salad about to be spruced up by some home-made dressing!  I just love doing this now.  Only takes a minute and it tastes so good, so much better than bottled dressing!!

This coming week I’ll be looking at my food with a little more eye to what my snacks are.  Now that I know I have to report back, you can bet I’ll be on my best behavior. 😉

Some Days Are Just Like That

Ok, so I’ve finished my first cup of coffee and I’m just now getting to starting my post for the day.  The fog that I thought was lifting is still sitting on my head.  I feel ok…just Fogged.

Maybe I’m having trouble focusing because I’m thinking that I have to write a serious post tomorrow regarding the Relay For Life. Maybe it’s just because that’s the way life is lately.

Just got my second cup of Joe and I hope to get my brain in gear.

I’ve been feeling a little unfocused on the food front as well.  This week has the excuse that I know I won’t be going to Weight Watchers on Saturday because the Relay will be finishing up around the time I usually go to my meeting.  Of course I could go to another meeting which was my original intention but…I just don’t feel like it.   Is that a valid excuse?  Suppose so.

While waiting to be picked up to go out with Gail and Alice, I had a banana and read.  Don’t remember how I felt as a child, but in recent years I haven’t been much of a banana fan.  I keep reading how good they are for me and blah-dy blah.  I keep trying.  Ralph likes them so I buy them.  I have to say that the bananas I’ve been getting at Aldi have totally won me over.  Next time I buy them I have to take a photo.  They’re totally green when I buy them, by next morning they are perfection.  Don’t know how that happens.  The banana fairies at work, I guess.  Anyway, I am now a banana fan.  They’re a great filling snack and they don’t count for any Points on WW.  Ok by me!

Lunch ended up looking a lot like a breakfast.

Fiber One and peach Greek yogurt…Both from Aldi.  So happy that Aldi now has the Greek in peach.  They usually only have strawberry and blueberry, not my favorite.  But this is really good.  Can’t figure out why I LOVE strawberries and blueberries in their natural state but not things flavored with either.  Ok, I’m weird and I know it.

Haven’t had a veggie dinner combo in a while, so what the heck.  Let’s have one!  Some of my veggies (broccoli for instance) were getting a little wilty so I needed to use them up.  Cooking them this way can make even the wilty ones tasty. So…brocolli, yellow squash, red frying peppers, garlic, shredded cheese and crock pot black beans.

Some spices mixed in and of course a touch of sriracha sauce on top does the trick!  This was just what I needed and it kept me satisfied for the evening.  I like that in a dinner!

I think we might just have a sunny day today!  Let’s hope the weather forecast holds for Friday evening/Saturday morning.  It’s supposed to be sunny and clear.  Last year we did the Relay in the rain and it was NOT fun.  Hoping for a better outing this year. 

Not sure what the day holds yet.  Oh, yes…gotta get Ralph to sign some more paperwork and get it in the mail.  Good luck with that!!

Time To Focus

Perhaps I should change the name of Broken Cookies Don’t Count to Not Feeling the Focus or Focus? What Focus?  I talk about it a lot.  I do not seem to achieve it.  It seemed that every time I tried to start a project yesterday, I got interrupted.

Riding my exercise bike.  I was excited to finish one book and start another.  Gail called and we talked a while and made plans to Skype later in the afternoon.  I started to do the dishes (yes, dishes are sometimes left in the sink overnight.  I really need to fire “The Help!”)  My phone rings and it’s Gail, they’re ready to Skype…right then! It was great fun and she showed me all of the treasures she’s been getting for her cabin in Maine And some things she’s gotten for me!  I’ll have lots to show you when she gets back from Florida.

Finished the dishes and had breakfast. Ok, so that’s backwards but here it is.

Lemon Chobani and Fiber One.  So good.  Gail taught me that combo and it’s great for breakfast, lunch or a snack.

I got dressed and started on cleaning/organizing a particularly offending dresser in the bedroom.  Ralph needed to run some errands and wanted me to come along.  With the bed scattered with stuff, we left on our errands.

Since we were in the shopping center where Subway is, he suggested lunch.  I thought for a moment…Wednesday…Weigh in on Saturday???  I decided if I only got a 6 inch sub I’d be ok.  I thought I might cave when I put in my order but I didn’t!! 🙂

A Veggie with provolone cheese and Southwest sauce.  Very tasty.  I felt satisfied and not guilty!

The Southwest sauce on my sub inspired me when it was time for dinner.  I’ve mentioned that I’m trying to make my own dressings for salads.  Here’s my latest.

1 Tbsp of olive oil

1.5 Tbsp of red wine vinegar

1 Tbsp of honey

1 Tbsp of plain yogurt, I used Greek

1 tsp of Penzeys Arizona Dreams seasoning

1 Tbsp of water (as extender for Big Salad!)

Romaine, plum tomatoes, carrot, shredded cheese and pumpkin seeds.  I’m out of almost everything!  I need to get to the produce market! 😦  I forgot to add my crock pot black beans to the photo, but 1 cup of beans joined the fun!

All joined together in the wonderfulness that is the Big Purple Bowl!  This was a really good salad.  My dressing didn’t taste exactly like the Southwest sauce at Subway but it was delicious and I’ll make it again.  I’m having such fun with this I think I’ll start a new feature.  I think I’ll call it Dressing Up!  That’ll confuse people! 😉
